oh kiwi

feeling, growingcarissa fox11 Comments

truth be told...
i sometimes pass up certain fruit in the produce area because
"they're too much work".

we love pineapple... buy it lots...
but often i'm quick to grab the handy dandy already cut for you pineapple.
same with cantaloupe.
we live on fruit over here...
apples... bananas... berries of all shapes & color... yadda.

life has been busy lately.
many days it's from one place to the next... with loads of driving in between.
hard to breathe sometimes.
i know you know... you're doing it too!

this brings me the kiwi...
it's one i tend to pass up... PLEASE carissa...
like it's "hard" to cut open or something.
in my mind i somehow... at some point... decided they were too time consuming.
and we LOVE kiwi!

life is nuts...
some days all we can do is grab that "apple" in the chaos...
but i was reminded this morning...
that little extra moment... to TAKE THE TIME...
and enjoy a little lovely kiwi... AND it's surprise inside...
SO worth it!

if we don't make ourselves pause...
take a bite (aka smell the roses)... and eNjOy... before we know it...
that "kiwi"... is out of season!

After years of pondering...
wanting to get our Gretel a friend... a four legged companion...
me dragging my feet... never being ready...
(my hubby would have a pack if he could... he's a dog lover)...
we added another yorkie to our family.

The responsibilty of ownership & commitment to training
is something i don't take lightly... so this for me was a big leap.
huge.
They could fall in love with a face all they want...
that's the easy part...
but i'm the one that's up in the middle of the night attending to potty needs.

The joy... i know... will prevail... always does.

So far we've come up with a few names...
Olive...
Mabel...
Penny...
we keep waiting to see if one sticks... fits her best.
Heard any fun names lately???!
do tell!

A couple quick mentions...

I have loved all the messages coming in... sO nice.
They are ALL a gift just in receiving them!
I know some of you have had questions...
I just wanted you to know I'm getting there... k... :).
Thank you for being patient... you are aWesOmE!

Lots of the questions are about where things were found/purchased.
I'll answer one really fast... as i'm sitting here & just snapped these pics.

The light in the studio... I'm guessing y'all saw it in the 365 photos?
It's another gem from Barn Light Electric!

If you'd like to take a peek... they recently shared our laundry on their blog.
I've gained LOADS of inspiration from their site... it's a goody!
You'll be pinning for sure!

now what...

oh boy!
i didn't know whether to scream or cry.
scream in excitement... cry because i want them back.

this one had quite the time trying to get to bed last night.
nerves were in full gear i think.
i remember that all to well... don't you?
the anticipation!
your mind racing... stomach flipping.
she was feeling it all.

at one point i crawled in bed with her...
we talked for a few minutes... and i prayed over her...
before you knew it... she was out.

before lil bit fell asleep...
we had a couple tears...
"i have a bad feeling no one will like me" she said...
you might as well have stabbed me in the gut...
oh to hear that...
you totally understand her feelings... it's only natural...
yet you want to make those doubts and feelings dissappear.
 precious pumpkin!
well i have a feeling too lil bit...... they'll love you!

mornings will be a bit different while we're in the apartment...
we've got about a twenty minute drive to get to the school.
thinking it might be fun though...
give us a little talk time... maybe some singing to kick off the day time.

their faces... i could SEE their butterflies!

and yet they were SO brave!
so funny and silly!
i am so proud of them!
hopping out at the drop of line... ohhhhhh i wanted to walk them in SO bad...
and heading into the school with big smiles!

feeling thankful!!!!
for teachers... what a blessing we have in them!
that our children get to attend school... in a safe environment... when so many don't.
and that i get to pick them up this afternoon and give them big 'ol hugs!

on those delicious cookies from friday...
i went for it.
okay well... sort of.
keep in mind we're in the apartment with very little resources... all being in storage...
i went the prepackaged route.
double stuffed oreos... and since they were out of toll house...
i grabbed the smaller pre-cut hershey pillsbury kind.

had a few trial & error...
what worked best was taking one pre-cut for bottom... two for top...
basically three per oreo... and working into around the oreo.
like a big cookie ball... just more dough on top.
baked them approx. 11ish minutes (per package)...
however...
i hated the way the dough was flattening out so... 3/4th through cooking...
i took the spatula and basically pushed it back towards the center... all the way around.
does that making any sense?
at all?
just getting it back more compact.
when they were a bit golden... just a tidge... love them soft and gooey...
still warm and soft... i pushed/scooted the dough towards the center once more.
this made them look plump... full and yummy.

 they turned out perfectly!
my hubby... who is not much a cookie fan... lOvEd them!

a reader jen... thanks jen!... pointed out a really neat site...
where she makes these and other goodies from scratch.

i can only imagine the variations...
with nuttter butters... yUm!
mint oreos... yikes!
i think it'd be a hoot too to make minis!

now what?
i think i might be in back to school shock!
thinking... give me a few days... i'll get the hang of this again!

hoping your week kicks off just so...
that it's the start of something really wonderful!
